So, loaded cauliflower is not a new invention, who knew?
A little Googling showed me that many people have had the same idea so I read a few recipes and then made my own version. I was not disappointed! Cauliflower is such a nice replacement for potatoes and even rice, so usually have some in my fridge. It’s really versatile and doesn’t have an overpowering flavor (or at least you can hide it pretty well).
This is very easy to make and I will admit that I’ve eaten this as a main course and not a side dish 😆 But it’s perfect with lots of things like steak, chicken or even fish. I mean it’s cheese and bacon, that goes with everything, right?
As you’ve probably sensed, I love this dish. It’s one of those things you have to have again and again. Even the carb loving family doesn’t mind it although that does not mean I’m willing to share!
