Keto Loaded Cauliflower! Tastes awesome and is easy to make.

Keto loaded cauliflowerThe other day I was making my carb eating family loaded baked potatoes and thought to myself: why not do the same for me and make loaded cauliflower?

So, loaded cauliflower is not a new invention, who knew?

A little Googling showed me that many people have had the same idea so I read a few recipes and then made my own version. I was not disappointed! Cauliflower is such a nice replacement for potatoes and even rice, so usually have some in my fridge. It’s really versatile and doesn’t have an overpowering flavor (or at least you can hide it pretty well).

This is very easy to make and I will admit that I’ve eaten this as a main course and not a side dish 😆 But it’s perfect with lots of things like steak, chicken or even fish. I mean it’s cheese and bacon, that goes with everything, right?

The verdict?

As you’ve probably sensed, I love this dish. It’s one of those things you have to have again and again. Even the carb loving family doesn’t mind it although that does not mean I’m willing to share!

Keto loaded cauliflower
Instructions
  1. Heat the oven to 220 °c (425 °F).
  2. Cut the cauliflower into bite size pieces and boil in salted water for around 8-10 minutes.
  3. Grab a bowl and mix together the mayo, sour cream, most of the bacon (leave some for garnish), half of the cheese and chives (also nice to leave some for garnish). Add a pinch of salt and pepper and don't forget the cayenne if you feel like it. Mix well.
  4. Add the cauliflower and mix well, but if the cauliflower is very soft be careful not to break it all apart while mixing.
  5. Place mixture in an oven proof dish, sprinkle the rest of the cheese and bacon on top.
  6. Bake for 15-20 minutes or until the cheese has melted and it looks done.
  7. Sprinkle with the rest of the chives and serve.
