  1. Heat the oven to 220 °c (425 °F).
  2. Cut the cauliflower into bite size pieces and boil in salted water for around 8-10 minutes.
  3. Grab a bowl and mix together the mayo, sour cream, most of the bacon (leave some for garnish), half of the cheese and chives (also nice to leave some for garnish). Add a pinch of salt and pepper and don’t forget the cayenne if you feel like it. Mix well.
  4. Add the cauliflower and mix well, but if the cauliflower is very soft be careful not to break it all apart while mixing.
  5. Place mixture in an oven proof dish, sprinkle the rest of the cheese and bacon on top.
  6. Bake for 15-20 minutes or until the cheese has melted and it looks done.
  7. Sprinkle with the rest of the chives and serve.
